- 3–4 boneless skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 2 large sweet potatoes (about 1 lb), diced
- 2 tbsp extra virgin olive oil
- 1/4 cup freshly squeezed lime juice
- 2 tsp chili powder
- 1 tsp cumin
- 1 tbsp honey or brown sugar
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
- Season chicken breasts with salt and pepper.
- In a bowl, whisk together olive oil, lime juice, chili powder, cumin, honey, minced garlic, salt, and pepper until well combined.
- Place seasoned chicken in the baking dish; pour half the marinade over it. Add diced sweet potatoes around the chicken and drizzle with remaining marinade.
