  • 34 boneless skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 2 large sweet potatoes (about 1 lb), diced
  • 2 tbsp extra virgin olive oil
  • 1/4 cup freshly squeezed lime juice
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tbsp honey or brown sugar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper.
  3. In a bowl, whisk together olive oil, lime juice, chili powder, cumin, honey, minced garlic, salt, and pepper until well combined.
  4. Place seasoned chicken in the baking dish; pour half the marinade over it. Add diced sweet potatoes around the chicken and drizzle with remaining marinade.
  5. Bake for 25-30 minutes or until chicken reaches an internal temperature of 165°F (74°C) and sweet potatoes are fork-tender.
