- 1 lb tomatillos, husked and quartered

- 2 jalapeños, chopped (adjust for spice level)

- Juice of 2 limes
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- 1. Prepare your ingredients: Wash and chop tomatillos, onion, garlic, and jalapeños.
- 2. Sear the pork: In a large pot over medium-high heat, add olive oil. Season pork with salt and pepper; sear until golden brown on all sides.
- 3. Blend the sauce: Combine tomatillos, onion, garlic, jalapeños, cilantro, and lime juice in a blender. Blend until smooth.
- 4. Simmer: Pour the sauce over seared pork in the pot. Reduce heat to low and cover; simmer for about 2 hours until pork is fork-tender.
- 5. Shred and serve: Remove the pork from the pot; shred it with two forks before returning it to the sauce. Serve hot with tortillas or rice.
