  • 1 lb tomatillos, husked and quartered
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 jalapeños, chopped (adjust for spice level)
  • 1 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. 1. Prepare your ingredients: Wash and chop tomatillos, onion, garlic, and jalapeños.
  2. 2. Sear the pork: In a large pot over medium-high heat, add olive oil. Season pork with salt and pepper; sear until golden brown on all sides.
