Description

Chicken Zucchini Poppers are juicy, savory bite-sized snacks made with ground chicken, grated zucchini, and simple seasonings. Crispy on the outside and tender inside, these poppers are perfect for appetizers, meal prep, or a healthy snack.


Ingredients

  • 1 lb ground chicken
  • 1 medium zucchini, grated and excess moisture squeezed out
  • ½ cup breadcrumbs or panko
  • 1 large egg
  • ½ cup shredded mozzarella or cheddar cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil (for cooking)

Instructions

  1. Preheat oven to 400°F (205°C) or heat a skillet over medium heat.
  2. In a large bowl, combine ground chicken, grated zucchini, breadcrumbs, egg, cheese, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  3. Scoop mixture and form into small balls or poppers.
  4. Oven method: Place poppers on a lined baking sheet, lightly brush or spray with olive oil, and bake for 18–22 minutes, flipping halfway.
  5. Stovetop method: Heat olive oil in a skillet and cook poppers for 3–4 minutes per side until golden and cooked through.
  6. Serve warm with dipping sauce if desired.
