- 1 lb ground chicken
- 1 medium zucchini, grated and excess moisture squeezed out
- ½ cup breadcrumbs or panko
- 1 large egg
- ½ cup shredded mozzarella or cheddar cheese
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil (for cooking)
Instructions
- Preheat oven to 400°F (205°C) or heat a skillet over medium heat.
- In a large bowl, combine ground chicken, grated zucchini, breadcrumbs, egg, cheese, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
- Scoop mixture and form into small balls or poppers.
- Oven method: Place poppers on a lined baking sheet, lightly brush or spray with olive oil, and bake for 18–22 minutes, flipping halfway.
- Stovetop method: Heat olive oil in a skillet and cook poppers for 3–4 minutes per side until golden and cooked through.
- Serve warm with dipping sauce if desired.
