  • 1.5 lbs Yukon gold or red potatoes, cut into 2-inch chunks
  • 3 tbsp extra virgin olive oil

  • Juice of 1 lemon (about 2 tbsp)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, season chicken thighs with salt, pepper, minced garlic, and 1 tablespoon of olive oil until well-coated.
  3. In a baking dish, toss potato chunks with remaining olive oil, salt, pepper, and herbs. Spread them evenly.
