  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic (minced)
  • 1/4 cup extra virgin olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 2 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup full-fat Greek yogurt
  • 1/2 cucumber (grated, excess water squeezed out)

Instructions

  1. In a large bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Cut chicken into bite-sized cubes and marinate in the mixture for at least one hour in the fridge.
  2. Preheat grill to medium-high heat (400°F). If using wooden skewers, soak them in water.
  3. Thread marinated chicken onto skewers. Optionally add cherry tomatoes or bell peppers.
  4. Grill skewers for 10-15 minutes until golden brown, turning occasionally.
  5. While grilling, mix Greek yogurt, grated cucumber, salt, and pepper in a bowl to prepare tzatziki sauce.
