  • 3 boneless, skinless chicken breasts (about 1.5 lbs), chopped
  • 3 cloves fresh garlic, minced
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1 can (15 oz) cannellini beans, drained
  • 2 cups low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 tsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Preheat the oven to 375°F (190°C). Chop the chicken into smaller pieces for easier handling.
  2. In a bowl, mix the chicken, garlic, panko breadcrumbs, eggs, salt, and pepper until combined. Form meatballs about one inch in diameter.
  3. Heat olive oil in a skillet over medium heat and sear the meatballs until golden brown on all sides (about 5-7 minutes). Remove from skillet.
  4. In the same skillet, combine diced tomatoes, chicken broth, and drained beans. Stir and let simmer for about 10 minutes.
  5. Transfer the sauce mixture to a baking dish and place meatballs in the sauce. Sprinkle with thyme and cover with foil.
  6. Bake for 30 minutes. Garnish with parsley before serving.
