- 1 cup panko breadcrumbs
- 2 large eggs
- 1 can (15 oz) cannellini beans, drained
- 2 cups low-sodium chicken broth
- 1 can (14.5 oz) diced tomatoes
- 2 tsp fresh thyme, chopped
- 2 tbsp fresh parsley, chopped
Instructions
- Preheat the oven to 375°F (190°C). Chop the chicken into smaller pieces for easier handling.
- In a bowl, mix the chicken, garlic, panko breadcrumbs, eggs, salt, and pepper until combined. Form meatballs about one inch in diameter.
- Heat olive oil in a skillet over medium heat and sear the meatballs until golden brown on all sides (about 5-7 minutes). Remove from skillet.
- In the same skillet, combine diced tomatoes, chicken broth, and drained beans. Stir and let simmer for about 10 minutes.
- Transfer the sauce mixture to a baking dish and place meatballs in the sauce. Sprinkle with thyme and cover with foil.
- Bake for 30 minutes. Garnish with parsley before serving.
