- 2 medium fresh leeks, chopped
- 1 cup heavy cream
- 2 tbsp butter
- 1/4 cup all-purpose flour
- 1 package puff pastry sheets (14 oz)
- Salt and pepper to taste
- 2 cups low-sodium chicken broth
- 1 tsp dried thyme
Instructions
- Preheat oven to 400°F (200°C) and lightly spray a baking dish with nonstick spray.
- In a skillet over medium heat, melt butter. Add leeks and sauté until soft (about 5 minutes).
- Add diced chicken, salt, pepper, and thyme; cook until chicken is no longer pink (about 8 minutes).
- Sprinkle flour over the mixture; stir well for about 1 minute. Gradually pour in chicken broth and cream while stirring until thickened (approximately 3 minutes).
- Pour filling into the baking dish. Cover with puff pastry, sealing edges by crimping with a fork. Cut slits in the pastry for steam to escape.
