Instructions

  1. Preheat oven to 350°F (175°C). Grease a muffin tin.
  2. In a bowl, whisk flour, baking soda, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy.
  4. Beat in egg and vanilla extract.
  5. Gradually mix in dry ingredients until dough forms.
  6. Press cookie dough into muffin tin cavities, forming cups.
  7. In a separate bowl, beat cream cheese, sugar, egg, and vanilla extract until smooth.
  8. Spoon cheesecake filling into cookie cups.
  9. Bake for 14–16 minutes until set.
  10. Cool completely, then top with cherry pie filling before serving.
