  • 8 oz smoked Andouille sausage (sliced)
  • 8 oz penne or fettuccine pasta
  • 1 cup bell peppers (mixed red and green, chopped)
  • 1 cup heavy cream
  • 4 cloves garlic (minced)
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 cup low-sodium chicken broth

Instructions

  1. Chop the bell peppers and mince the garlic.
  2. In a large skillet over medium heat, add olive oil. Sauté the sliced sausage until browned, about 5 minutes.
  3. Add bell peppers and garlic to the skillet; sauté for another 3 minutes until softened.

  5. Pour in heavy cream and chicken broth; stir in Cajun seasoning. Let simmer for about 5 minutes until thickened.
  6. Combine the cooked pasta and shrimp with the sauce mixture, cooking until shrimp turn pink (about 3 minutes). Adjust consistency with reserved pasta water if needed.
