  • 2 cups cherry tomatoes
  • 1 cup fresh basil leaves, chopped
  • 3 tbsp olive oil
  • 12 oz rigatoni pasta
  • 1 cup low-sodium chicken broth
  • ½ cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Season chicken breasts with salt and pepper and place them in a baking dish with cherry tomatoes. Drizzle with olive oil.
  2. Roast in the oven for 20-25 minutes until chicken is cooked through and tomatoes are bursting.
  3. Meanwhile, boil salted water in a large pot and cook rigatoni according to package instructions until al dente.
