  • 2 medium acorn squashes
  • 4 tbsp unsalted butter
  • 4 tbsp brown sugar (light or dark)
  • 1 tsp ground cinnamon
  • 4 tbsp pure maple syrup

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice each acorn squash in half lengthwise and scoop out the seeds.
  3. Place squash halves cut-side up on a baking sheet. Add 1 tbsp of butter to each half, followed by 2 tbsp of brown sugar and a sprinkle of cinnamon.
  4. Drizzle 2 tbsp of maple syrup over each half.
  5. Bake for 30-40 minutes until fork-tender and caramelized.
  6. Remove from the oven, cool slightly, then serve as desired.
